Spicy Wild Boar with Pommes Dauphinoise

Serves 1

Preparation time: Less than 30 mins
Cooking time: 10 to 30 mins

For the dauphinoise sauce
• Knob of butter
• 1 tbsp oil
• 1 potato, peeled and sliced
• 85g/3oz Stinking Bishop cheese, grated
• Salt and freshly ground black pepper

For the boar
• A little oil for cooking
• 150g/5½oz wild boar steak
• ½ tsp curry powder
• Salt and freshly ground black pepper

Preheat the oven to 200C/400F/Gas 6. Heat an ovenproof pan with the knob of butter and oil.

Add the potato slices and sauté for a few minutes until the potatoes are golden brown on both sides.

Sprinkle the cheese, salt and pepper over the potatoes and place the pan in the oven for 10-15 minutes.

Sprinkle the wild boar steak with curry powder, salt and pepper.

Sear in a hot pan for 3-4 minutes on each side, or until cooked to your liking.

Allow to rest for five minutes before slicing diagonally.

Turn out the potatoes onto a plate and serve with the slices of wild boar.

Wild Boar Popovers with Tomato Sauce

Serves 1

Preparation time: Less than 30 mins
Cooking time: 10 to 30 mins

For the popovers
• 2 wild boar sausages, each cut into 5 pieces
• 5 tbsp vegetable oil
• 100g/4oz plain flour
• 2 medium eggs
• 300ml/½ pint full fat milk
• A splash of water
• Salt
• Freshly ground black pepper

For the sauce
• 400g/14 ½oz can tomato fillets
• 1 tbsp balsamic vinegar

Preheat the oven to 220C/425F/Gas 7.

Pour one tsp vegetable oil into ten muffin holes of a muffin tin.
Place the muffin tray in the oven to heat the oil.

In a small frying pan, heat the remaining oil.
Fry the sausages for 2-3 minutes, to seal.

In a medium bowl, whisk together the flour, eggs, milk and water, to form a batter. Season.

Carefully remove the muffin tray from the oven.

Using tongs, place a piece of sausage into each muffin hole.

Divide the batter between the muffin holes.

Bake for 10-12 minutes or until risen and cooked through.

Pop tomatoes in a pan and bring to simmering point.

Stir in vinegar and simmer for 5-6 minutes. Serve.
